Homemade Pasta with Spinach Pesto

Homemade pasta is fun to make, surprisingly simple and absolutely delicious. All you need to get started is for someone to show you how to make it. Anne-Marie Bonneau, author of The Zero Waste Chef cookbook, will demonstrate how to make pasta with a handful of ingredients in this virtual cook-along. Together, we’ll make pasta from scratch with a fresh spinach pesto topping.

Ingredients for two servings

  • ½ cup all-purpose flour
  • ½ cup fine semolina flour plus extra for dusting
  • 2 large eggs
  • 1½ cups spinach (or swap this all out for basil if available; a bit of arugula is good too)
  • ¼ cup pine nuts (or walnuts)
  • ¼ cup olive oil
  • salt
  • 1 large garlic clove
  • 1 lemon
  • 2 tablespoons grated Parmesan cheese OR nutritional yeast for vegan

  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Food processor
  • Large mixing bowl and fork OR stand mixer
  • Rolling pin and sharp knife to shape the noodles OR a pasta machine
  • Large work surface for pasta
  • Bench scraper
  • Large pot
  • Colander
  • Kitchen towel
